This text has as objective to present some definitions on this subject. Alimentary security is a set of production norms, has carried and food storage aiming at determined characteristic physicist-chemistries, microbiological and sensorial standardized, according to which the foods would be adjusted to the consumption. These rules are, until certain point, internationalized, in way that the relations between the peoples can take care of the commercial and sanitary necessities.
